KHAKI is a modern Indian bar & canteen built for everday eating, rooted in memory, migration, and meticulous craft. Led by the creative forces of Chefs Sujan and Pujan Sarkar, the menu reimagines Indian comfort food through the lens of California’s vibrant produce, global technique, and personal nostalgia. From Delhi street-style kababs to Kerala fish curry, every dish reflects a contemporary expression of Indian soul;  bold, refined, and deeply personal.

Every dish on the menu at KHAKI carries a story, rooted in memory, reimagined with craft. The Jackfruit Cutlet riffs on the street-side vegetable cutlets of Kolkata, a formative favorite. The Beef Sukka channels Pujan’s recent travels through coastal Karnataka, dry-roasted, deeply regional, unmistakably comforting. His Champaran Mutton brings back a rustic, garlic-laced curry cooked the traditional way: low and slow in village clay pots. The Fish Paturi nods to our love for Bengal’s mustard-charged flavors. And for Akash, chaat and kababs are pure nostalgia, playful, punchy, and full of personality. This menu isn’t just food, it’s lived experience, plated. 

KHAKI is a culinary road trip across India mapped by memory, refined by technique. From Andhra-style Chilli Chicken and Mangalorean Beef Sukka to Parsi Keema Pao and Kerala’s Prawn Alleppey Curry, each dish evokes a region and a story. The journey spans Shyambazar’s Mutton cutlet, Akash’s native Bihar with a rustic take on Champaran Mutton, and lands in the north with iconic butter chicken, all reimagined through a modern lens and meticulous craft.

At the helm is Chef Sujan Sarkar, known for reshaping Indian cuisine globally, bringing a bold, storytelling-driven vision to KHAKI. He is joined by his brother, Chef Pujan Sarkar, whose deep expertise in regional Indian flavors and technical precision grounds each dish. Together, they create a menu that balances innovation with memory, flair with soul.
